Menu 2, Duck

Menu 2 is Duck, we are given the whole duck and taught how to cut the breast and leg. Duck is very challenging for me cause during diploma, I think I only did it once. And the sauces for the duck is so weird this time, Gastrique? Game Jus? Mix Berries? Green Oil? Lets don't talk so much and show you what I choose this time:

Menu 1, Fish

My 1st kitchen class. Overall was good, Chef Souji said mine is one of the best in term of taste. But decoration of mine was a failure. Sobz. Anyway, its ok, learn from the mistake and do it better next time. This time, the techniques I choose are as below:

The Pathway Of Option B

After I done my "Diploma In Hospitality And Tourism Management", now, I am going to "Higher Diploma In Hospitality And Tourism Management", because I am a diploma student, I am allowed to skip the 1st year of degree. =) Degree are separate to 2, OA and OB, OA=study,study,study whereas OB=study,cook,eat. Therefore I choose OB and now I am facing 5 different menus that I will have to do in this term. We are required to create our own dish with the ingredients given in 2 hours.

And the nightmares to be continue~~
